Cold Pasta Salad!
I just needed something quick and easy this week and decided to make a pasta salad. It's one I've made before and can easily be fiddled with to fit your mood :)
Just a couple ingredients. You can add in other veggies like cucumber, olives, etc to suit your tastes.
Chop everything up into little bitty pieces while your past cooks. And combine all ingredients.
Really. That easy :)
It's not bad warm but I like it after it's sat in the fridge a bit and the flavors
have had a chance to mix and mingled a little.

Cold Pasta Salad Recipe
1 8oz box pasta of choice
1 cup Italian dressing
1 small red onion
green pepper
grape tomatoes
[any other veggies you'd like to add in]
- Cook pasta until tender
- While pasta is cooking chop your veggies into small bits. You can add however much of each you'd like. I used 1 small red onion, 1/2 green pepper, 1 1/2 cups grape tomatoes this time
- Drain pasta and add all veggies to it
- Add 1 cup of Italian dressing and mix well
- Allow to cool and serve!

It's pretty tasty. Nice little bursts of flavor in every bite. It gets better after it's sat a while too :)

ReplyDeleteOooo I've done the rainbow noodles before. They are pretty with it too. I'm not big on olives. Gah. I'm such a terrible vegetarian. LOL. It really is a versatile one. I love that it's so easy to add more or less of an ingredient depending on my mood each time :)

Yum! That salad looks so good. The veggies look so fresh and vibrant. I love pasta salad and I like it many different ways. Pasta with pesto in one of my favorites!

Hmmm. I don't think I've tried pesto since I've been grown. I was so not a fan when I was younger and haven't been brave enough to try it again. LOL. I'm a wuss I guess ;) Maybe I'll try that for a Tasty Tuesday!

Okay, I'm weird, I know.....my onions and peppers have to be cooked. This would be good with olives and cucumbers like you mentioned and those tomatoes, the picture made me crave them and there are none to be seen in my house right now.
