Tasty Delights--Hash Brown Casserole


Tasty Delights and Dazzling Disasters is all about playing in the kitchen and having some fun.

So one of my recipes from the Great Freezer Fiasco of June 2014!

Yep. I managed to leave my freezer drawer open ALL night. 
Came downstairs to everything melted.

*exasperated moment of silence*

And so the cooking began. 
I'd just bought 2 pounds of frozen hash browns so Hash Brown Casserole was a go!

This one is SO easy to make. All ingredients I had on hand too!
Just mix everything together (but the cornflakes and part of the butter needed later)

Then pour into a baking dish.


Then on to...sauteing cornflakes.

Something I never thought I'd actually read. Or do! lol
It was easy though. Just butter and cornflakes. Give them a little stir and a sizzle.
Then layer them across the potato mixture.

Bake and serve!


This was actually really good. Creamy and with a nice crunch from the cornflakes.
Definitely one to make again.

The only thing is that it's best eaten right away.
The potatoes themselves are fine as leftovers but the cornflakes on top...
Yeah they lose some of the magic in being refrigerated and reheated.

If you've made way more than you can eat in one meal I'd suggest not covering the whole thing with cornflakes and doing a quick saute of them and adding them on as you're ready to eat them.
