Tasty Delights-- Lemon Pie (all fancified)

So. I was bored. lol And then pie happened. I wanted to do a fourth of july-ish pie (of course it didn't actually happen in time for fourth of july but, well) and I started a pinterest search. Which found me an ice cream cake with red and blue pin wheel-ish design. And I had an Ooo! pretty! moment.

But I don't eat ice cream.

And really a whole pie of ice cream...ergs.

So I thought...hmmm what about key lime pie. Because that would have the right consistency I needed for the design. But I wasn't in the mood for key lime and had lemons so figured I'd try for a lemon pie. I found an egg free recipe as well since I'm off those right now.

It's a little tart but pretty good! Even if the whole recipe was an exercise in creativity and making do.

Okay so my first thing flub was grabbing old graham crackers. Like 2 years old. And yall...they do not taste good. lol Thankfully I tasted before putting anything together and found the fresh crackers.

Then I realized my regular blender is still packed away somewhere so I had to use my hand held blender. 

Problem was the cracker crumbles went flying...everywhere. 
So I put a little film over it and cut a hole and...perfection!

Then I couldn't find my pie pan (the kitchen is still mostly packed away) so I ended up using one of my cast iron skillets. lol

Next up the filling (don't forget to set some aside to color) and pouring it in the pan.

Then add those swirls! 

And so we have another erm moment because my toothpicks are packed away too. *hangs head* I swear this recipe was out to fucking get me. But I did have a fake fork and those tines worked great after snapping them off!

And man. Because this recipe was just this recipe it ended like this... lol Careful slicing, people. Careful slicing. 

It was pretty good, though. A little more tart than a key lime pie but tasty.
