Tasty Delights-- Gnocchi w/ Roasted Butternut Squash, Brussels Sprouts & Browned Butter Sauce

Seriously doesn't that sound fancy as all fuck? lol

This is one of the HelloFresh boxes and, man, they do have a thing for brussels sprouts. A lot of the winter recipes had them. Works for me, though, since I like them and have been having fun trying them in different ways.

This time with gnocchi and butternut squash with a maple syrup/sage browned butter sauce. And oh it was delicious!

This one was super simple...


Ingredient-wise it's simple, too. Gnocchi, butternut squash, brussels sprouts, sage, salt/pepper, maple syrup and butter.


Roast your squash that's been tossed in a little olive oil, maple syrup, salt and pepper.


While that bakes slice your brussels sprouts and cook until starting to brown. And pop your gnocchi into a pot of boiling water. I totally forgot to take a pic of my sprouts cooking. But they did. I swear. lol


The brown butter sauce is a bit of butter and maple syrup mixed and then sage added in for a couple minutes. Then remove sage leaves. I'm not a huge fan of sage so I'd leave that out the next time I make this. That was my only real complaint about this one. 

Now. I'll tell yall. This recipe landed me at the grocery store at 3am shopping for butter. *hangs head* HelloFresh provides almost everything a recipe needs but staples like butter/salt/pepper/oil you have to supply on your own. And I got all the way to this point and was life fuck! I have no butter! HOW DO I HAVE NO BUTTER?!! I'll tell you. Cypress and Marcie. They love to lick my butter if I forget and leave it unsupervised on the counter for even 10 seconds. *flails* So, yeah, grocery store at 3am. Worth it, though.

Worth. It.


Then combine it all-- the cooked gnocchi, the roasted squash, the brussels sprouts and the browned butter sauce.


And...eat! This really was delicious. I ended up adding a smidge too much salt but still enjoyed it. It had just a very light sweetness from the maple syrup but not bad at all. It was perfect for a cold winter night.
