Tasty Delights-- Spring Greens Gnocchi #amazing

Anywo, this time there was nothing in the recipe I'd not tried and loved previously but the combination of ingredients...I guess it's just not something I would have done normally or even thought of. But it was delicious. I really could have eaten the entire pan and not felt bad about it at all. I definitely went back for seconds.



Gnocchi, peas, asparagus. Some garlic and parmesan and a little sour cream. I wasn't sure about adding walnut pieces because... kinda strange and didn't think the texture would work well. But it worked!


Some not so pretty steps.
Saute those garlic slices.
Smells heavenly!!


And boil your gnocchi.
If you haven't worked with them before you can buy them in the pasta aisle at most stores. Then you just plop them in boiling water. They'll sink to the bottom and once they're floating that means they're done. They cook very quickly!


Add peas to your garlic! I love the color of fresh peas. So vibrant!


LOL I know not the prettiest of pictures. I used the same water from my gnocchi to do a quick boil on my asparagus.


Once everything is cooked start adding them together.
Doesn't that just scream spring?!


And a few more ingredients. This really was simple. Add and mix!


You get a very light cheesy cream sauce.


And  bowl of deliciousness!


Seriously. This was amazing. And will become a staple in my meal planning.
It was a perfect combo of warm comfort from the gnocchi and a pop of fresh spring from the asparagus and peas. Filling, simple, delicious. Perfect!

Ingredients:

6oz Asparagus
2 cloves garlic, sliced
1/4oz tarragon
9oz gnocchi
4oz peas
2 TBSP sour cream
1/4 cup parmesan
1oz walnuts
2 TBSP butter

Directions:
  • Bring a large pot of salted water to a boil. Cook gnocchi until tender and floating. 4-5 minutes
  • Set aside gnocchi then boil asparagus 1-2 minutes until bright green. Reserve 1/4 cup water
  • Melt butter on medium low until beginning to brown. 3-4 minutes
  • Add garlic and cook until fragrant (30-60 seconds)
  • Stir in peas and toss to coat
  • Remove from heat and add gnocchi and asparagus. Season with salt/pepper.
  • Return to stove (medium) and add sour cream, parmesan, half the walnuts, half the tarragon. Stir until everything has melted and formed a sauce, 1-2 minutes. If too thick you can add a bit of the reserved cooking water.
  • Garnish with walnuts and tarragon then serve.
