Tasty Delights-- Sweet Potato Kale Soup


It's gotten chilly here lately and I'm all about the soup. So, so good.

This time it was Sweet Potato Kale Soup with lentils. I'm doing that whole try to be healthy bit and this seemed pretty dang healthy, yeah?


Fairly simple ingredients. The original called for different spices but they weren't the spices for me so I kept it just salt, pepper and bay leaf.


Chop all the things. Sweet potato, carrot and onion.


And because this is a super super easy one all you do is dump near everything (just not the kale yet) into a pot and cook.


Once things have cooked for a while dump in the rough chopped kale and simmer until it's tender.


This was a hearty soup. Filling and pretty dang tasty, too.
I love sweet potato and kale is growing on me. I don't use lentils too often but they're simple and easy to make as well.


It was a nice combo of flavors and textures. I was pretty happy with it. I do think maybe I'd do it with spinach next time but, really, I don't mind kale all that much. I know it's a deal breaker for some. lol

Ingredients:
  • 2 cups green lentils
  • 5-7 cups vegetable stock
  • 3 carrots, chopped
  • 2 medium sweet potatoes, cubed
  • 1 onion, chopped
  • 2-3 cloves garlic, minced
  • 1 bay leaf
  • 1/2 tsp dried thyme (I left this out)
  • salt/pepper to taste
  • 3 leaves kale, stems separated and rough chopped
Directions:
  • In a large stock pot, add all the ingredients, except the kale. 
  • Bring to a boil, then cover, turn down and simmer until the lentils are soft. About 30 minutes. 
  • For the last 5 minutes of cooking, add the kale. 
  • Serve immediately or refrigerate for later.
