Tasty Delights-- Pesto Tortelloni Bake

Aaaaand another HelloFresh meal. Ha! I swear half my 'new' recipes I make are from HelloFresh. They've been a lot of fun. And almost all of them very simple. I'll link info for HelloFresh at the bottom for anyone interested.

Anywho. So Pesto Tortelloni Bake was up for today. And I was like huh! They had a typo. But I did a little looking and tortelloni is a thing. Who knew?! It's like the bigger cousin to tortellini. Larger and often cheese and vegetable filled instead of meat. Works for me! They were GOOD!


Milk, pesto, asparagus, some garlic, cheese and panko plus the yummy tortelloni.
I did add salt, pepper and a little olive oil (those aren't included in the HelloFresh packs but are in the recipe)


Start out cooking your asparagus. Just a couple minutes.


Then add in some sliced garlic and saute until you can smell it. Just like 60 seconds. 


Not an attractive step but adding some goodness. The veggie broth, milk and pesto.


Bring that to a boil then toss in your tortelloni. Toss them a little then line them up covering the dish evenly. And then cook until the sauce has thickened and the tortelloni are tender. I put it on simmer for 5-7 minutes and covered it.


While everything is cooking mix up the topping. This is just panko, parmesan and a little drizzle of olive oil.


Yes. Not the prettiest of pretties but it was tasty! After things have cooked top evenly with the panko mix the put in the oven for a few minutes until it starts to brown a little. I took mine out a little too soon but I was hungry, dammit!


And the end result? This was delicious! It might not have been the prettiest of dishes but it was a total win. Very easy to make and filling. It made two large portions which were perfect for a meal with a salad on the side. I'd probably make it with almond milk next time which would lower the calories a little bit. And add some more asparagus. But it was great how it was. Warm, hearty and had a nice little crunch from the panko topping. I'll make it again :)

Pesto Tortelloni Bake Recipe, serves 2

Ingredients:

2 cloves garlic
6 oz asparagus
1 cup milk
veggie stock concentrate (about 2 tablespoons)
2oz pesto
9oz tortelloni
1/4 cup panko breadcrumbs
1/4 cup parmesan cheese
olive oil
salt/pepper

Directions:
  • Preheat oven to 500 degrees
  • Cut asparagus into bite sized pieces then cook 1-2 minutes on medium high with a little olive oil
  • Thinly slice garlic and add to the asparagus. Cook until fragrant. Add salt/pepper to taste.
  • Add milk, veggie stock concentrate, pesto and combine.
  • Add tortelloni. Toss in mixture then spread in a single layer. Cook on simmer until sauce thickens and tortelloni are tender. About 5-7 minutes. I covered the dish. Stir occasionally. Add a splash of water if it gets too dry.
  • While tortelloni is cooking combine panko, parmesan and a little olive oil. Salt/pepper.
  • Sprinkle panko mix over tortelloni then place in oven until sauce is bubbly and panko has started to brown. 1-2 minutes.
  • Serve!
