Tasty Delights-- Hashbrown Casserole & my favorite probably gonna make you cringe sandwich :)

Potatoes are my weakness. Not even gonna lie. One of my friends, Tonya, sent me a recipe for hash brown casserole and I couldn't resist. It turned out pretty nicely and was tasty with my favorite sandwich :)


My ingredients were slightly off from the original recipe since I'm not a meat eater.


LOL now doesn't *that* look appetizing? 
Mix well then press into casserole dish and bake!


And hash brown casserole. It was pretty good. 
It's not very crispy though so if you prefer your potatoes that way you've been warned :)
I ended up putting them under the broiler for a bit myself.


Okay, so my favorite sandwich. Heh. I've only convinced one person to give it a go--my mom--and she had about half a sandwich before she said she was good. LOL

It's toasted bread with fried egg, cheddar cheese and apricot jam. Salt and pepper to taste :)
It's so flipping GOOD!

Hash Brown Casserole Recipe (for printable recipe click HERE)

2 lbs hash browns--either frozen that have been thawed or from the refrigerator section
1/2 cup butter, melted
1 can (10.75 oz) cream of chicken soup (I used cream of celery)
1 pint sour cream
1/2 cup onion, chopped (I used an entire onion)
2 cups grated cheddar cheese
1 teaspoon salt
1/2 teaspoon pepper
  •  Preheat oven to 350. 
  • Spray 9 x 13 baking dish with cooking spray. 
  • In a large bowl, combine all ingredients & stir together. 
  • Spread evenly in baking dish. 
  • Bake for 45 minutes until top is golden brown.
