Tasty Delights--Oven Roasted Sliced Potatoes

I flipping love potatoes. Favorite food (other than ketchup and chocolate). 
Saw this recipe over on Pinterest and thought I'd give it a go. 
Not bad. Not bad at all. 

Pretty simple ingredient wise. Next time I'm playing a bit with the seasonings.

Yeah, Margarite likes to help cook in case there are...accidents.

Mix up your potatoes and other ingredients until well coated.

Lay them out on a lined baking sheet. And bake!

These were pretty good. I'd tweak the recipe a little next time but not bad for a different way to serve potatoes as a side dish. I liked the crispier ones myself so would bake em a little longer next time I think. The original 15 minutes wasn't enough time at all. Mine went for double that and were still a little soft.

Oven Roasted Sliced Potatoes Recipe

2 large potatoes--thinly sliced (1/4 inch)
3 tablespoons olive oil (I'd do a little less of this)
1 tablespoon Italian seasoning
1 teaspoons salt (I'd add another 1/2 teaspoon)
(would add a little pepper and maybe garlic powder too)
Parmesan cheese
  • Toss potatoes in oil, Italian seasoning and salt until well coated
  • Line baking sheet with foil then spread potatoes evenly across pan
  • Bake at 450 for 15-20 minutes (mine went in for about 35 minutes) or until lightly browned
  • Sprinkle with Parmesan Cheese and bake 5 more minutes
