I'll share my delights or my disasters. Yall feel free to join in and create your own posts, share your favorite recipes, what have you.

Something simple and everyday served just a little differently.
Perfect for a quick easy meal during the holidays when you've got a house full of guests and don't want to spend all of your time in the kitchen.

Oh this one is so easy. Mix all your ingredients (I left the meat out) in one big bowl.

Toss them in a casserole dish sprayed lightly with cooking spray and top with more mozzarella.

Bake and serve with extra marinara and a bit of basil.

I really enjoy this one and that it can go veggie so easy.
Simple and comforting!

    1. LOL I can overdo it too from time to time. I love really simple foods like this but I also love experimenting and doing crazy recipes too!

    2. I's really easy. I don't have a recipe for it exactly lol It's simple enough though.

Brown hamburger add whatever spices you like in it. Drain and mix in cream of mushroom until it's the consistancy you prefer (I like more beccause it keeps it from drying out and I add a bit of sour cream) Make a layer of tater tots in the bottom of a cake pan add cheese on top of that. It makes a crust. Then pour in the hamburger mix. I add another full layer of tater tots and cheese on top. Put it in the over at 375 (or whatever temp the tatertot package says they should be cooked at) for about an hour. Sometimes mine cooks a bit faster (depending on the stove) so I just check with a fork and if the tatertots are soft and cheese is nice and melted I take it out early.

lol I would be horrible at writing recipes! My spices I add into the hamburger always changes .... the only thing that is consistant is while I brown the hamburger I put in diced onions. Very filling meal and I always end up making WAY too much. Last time I cooked it was for 10 people and we still had a ton of leftovers that we munched on for the weekend lol

My recipes (if you can call them that) change so much I don't think I could ever make a recipe book. It's always well this is what we have so let's work with it! I have made some of the most out there concoctions because of not having much and I had to make the food stretch. Definitely makes dinners interesting! The girls love it. They never know what it's going to taste like even if it's the same meal we had the day before!

    3. LOL Penni it sounds really good. I'll have to play around with it since I don't eat meat but I think the fake meat crumbles would work if I season them right :)

I grew up next with an Italian "granny" living next door and her recipes are the same way. When I moved away for college I asked her, my real grandma and my mom to write down all of our favorite recipes for me and hers were too funny. A little bit of this, a little bit of that, etc.

    4. I know a few friends that make this without any hamburger...you just season the tatertots and mix instead.

    5. I think that's probably the route I'll go. The fake meat doesn't always work so great with some things. Thanks Penni!

  3. I love doing this to my next day spaghetti. Throw it in a baking dish, add some grated cheese to the top and poof! You have a great meal from leftovers.

    1. Yep I think that's what I'll be doing from now on! I always end up with way too much pasta and it gets old eating it the same way over and over again. I've fried it before which was really good. We had it at this little restaurant in the middle of no where Italy one year and it was SO good.
