Tasty Delights-- What's Been In My Kitchen Lately

I'm just doing a terrible job of getting blog momentum going other than the odd garden post. Oof! I've been spending my time at the pantry, in the garden. Playing my little war game and spending time with MountainMan and, well, I get lazy I guess. Ha!

But today instead of my normal cooking posts where I do out an entire recipe and I'd just share some of the yummier things I've made the last few months. Eventually I think I'll probably turn some into full out posts but for now...some noms. What kinds of things have yall been cooking lately?

  

Cauliflower Carrot Soup-- a staple lately. Super simple. Just cauliflower, onions, carrots, broth and a little cheddar cheese. So easy and super low cal which has made it a nice filler while I'm getting healthy.

Fried Halloumi and Sweet Thai Chili Sauce-- another staple. I love halloumi. It's cheese that you can put directly on a grill and it doesn't melt. It just grills and forms a nice sear. A little kick from the chili sauce and so good. 

Zucchini boats-- Just zucchini filled with meat, tomatoes, onion, and taco seasoning. Pretty tasty too!



Vegetarian Chili-- This is one I've actually done on the blog before. Harty and once again simple. My go to! lol


Lentil Kale Black-Eye Pea Stew-- This was my New Year's dish. It turned out pretty good. Not something I'd make often but for New Years to get all my "lucky" foods in...Perfect!


Zucchini Mash-- I've been obsessed with zucchini. This is actually an evolution of the zucchini boats because...again...I'm laaaaaazy. I got tired of making the boats. So I just put it all in a pan and cook. I have this probably every week now lol

  

Eggplant Parm Bowl-- Not too bad. It's basically eggplant parm cooked into the eggplant. 

Wedge Salad-- Well sort of. Not my favorite method of salad eating but fun now and again

Charcuterie Board-- I'd never made one *gasp* It was pretty fun but oof a lot of work! lol 


Taco Charcuterie Board-- lol I couldn't help myself. It was good too!

  

Pizza-- another staple. Funny when trying to lose weight but it's something I 'need' so I have it every week or so. Usually onion and green pepper, sometimes margarita, sometimes greek minus the olives. Nom!

Eclair Cake-- A no bake ice box cake. It was simple and easy. Just layered whipped cream, graham crackers and covered in chocolate. Mmmm

Banana Ramen-- Don't balk! This has been my favorite comfort food since I was in middle school. lol It's the oriental or soy sauce ramen usually. Sometimes ginger. With a banana. It's the perfect salty sweet. And if a spicy ramen helps it a little. So good!


Veggie Sausage Pasta-- I've been liking vegan sausage lately. Tossing a mix of veggies in and pasta. Takes a little tie but well worth it. 

 

Tomato Salad-- Any type of tomatoes with basil, salt, pepper, balsamic glaze drizzle. I've been doing a lot of tomato/cucumber/chive/lemon salads too. Very refreshing and a nice side with a heavier dish

Vegetable Bean Soup-- All kinds of soup were had in the winter/spring. Nice with a hearty bread.


Ricotta Pasta with Sausage-- A n ice pasta dish. Sausage, tomatoes, onion, spinach and then herbed ricotta. Definitely a winter food. It gets the house way too hot cooking it otherwise lol
