Tasty Tuesday: Crock Pot Mac & Cheese!


Crock Pot Mac & Cheese!

A little while back when I was searching for some new holiday recipes to try for "Tasty Tuesday" and a lovely lady in one of my Facebook groups, Jackie, was kind enough to share one of her holiday side dishes with me. Thanks Jackie! It was delicious!

This mac&cheese is a little different from other recipes I've tried. And I've tried a lot of them b/c mac&cheese is as close to perfection as you can possibly get ;) I never would have thought to add evaporated milk or cheddar cheese soup to the mix but they definitely make for some yummy results!

This one's really simple. Cook & drain your pasta. Toss stick of butter into the crock pot, cover with warm pasta & mix in remaining ingredients. Stir really well.

Cook on high for 1 hour.
Cook on low for 2 hours.
Stirring every once in a while.

 Enjoy the results! 

This was some delicious mac&cheese. Flavorful and creamy. But I can't say this is how I'll be making my mac&cheese on a regular night because this girl is way too damn impatient to wait 3 hours for her mac&cheese but what a fabulous idea for the holidays when oven/stove space is at a premium. Very few dishes to clean too! Great bonus!

Less than 15 minutes on the stove to cook the pasta then you can pop everything into the crock pot and push it into the corner to free up space while you cook the rest of your holiday meal. Brilliant!


Crock Pot Mac & Cheese Recipe

Ingredients
16 oz elbow shaped noodles
1 stick of butter
1t salt
1/4 t pepper
1 can Campbells Cheddar Cheese Soup (10 oz)
1 can evaporated milk (12 oz)
1 bag shredded sharp cheddar cheese (4 cups)
2 beaten eggs
1/2 to 3/4th cup milk
  • Cook pasta and drain
  • Add stick of butter to crock pot and pour cooked pasta over the butter
  • Add salt, pepper, soup, evaporated milk, regular milk to crock pot and stir well
  • Add in beaten eggs (do this after the above so the pasta is slightly cooled)
  • Add shredded cheddar cheese and mix well
  • Cover and cook on high for 1 hour
  • Reduce heat and cook on low for 2 hours (check & stir every once in a while)
  • Stir and serve!
  • Best hot out of the crock pot

    1. LOL Leah I so wasn't a baker in my past lives either! (cupcakes are my own personal hell) but I damn if I don't keep trying ;) Now cooking that I can do! And this was so flipping easy and smelled so goood when it was cooking too. Always love that.

  3. That sounds great! I can bake up a storm and make awesome cookies cakes etc...but give me mac&cheese.....and somehow I mess it up every time! Either too runny or too think, then it's on to I burnt it or I didn't cook the noodles long enough. It's a disaster! Having them in the crockpot for so long simmering would remedy the noodles if they aren't cooked enough!

    1. LOL I'm the *exact* opposit Penni! I can cook most things but baking? I can make a mean cookie but anything that has to actually rise? Bwhaha. Nope, never works. Terrible thing is my mom is a baker and can do anything with it (but she cant cook)!

    2. *giggles* well atleast, between the two of you, you guys have all of it covered! I grew up spending a lot of time with my Oma x3 (Grandmothers and my Great Grandma) They all loved to cook and bake. I learned so many recipes and tricks of the trade so to speak. If my Oma ever saw me open a box of something to cook I would get a rant for weeks! lol She said Never eat anything if you can't grow it, prepare it, and cook it yourself! Granted she was 91 when she passed so she lived in a time where that was normal lol

  4. This is really similar to our family's version of Mac & Cheese, except we don't use the soup or the evaporated milk, and we bake ours in the oven. Ours is pretty yummy, but I'll have to try it with this additionl

    1. I made this one again and popped it in the oven. Was just as yummy. The soup/evaporated milk just gave it a bit more richness. Gah wish I had a bit more now! Happy cooking!

  5. I really need to stop coming here on Tuesdays. You always manage to tempt with me amazing looking dishes...and then I get these crazy thoughts in my head, like 'Go make it now', even though it's well after 10 pm. And I have none of the items in my pantry right now anyway (which is probably the only thing saving, I mean stopping, me right now). :) I will definitely have to add this to my meal list for the next week though. Yum!

    1. LOL I usually get that crazy idea in my head to try a new dish about then too. That's when most of these things get made and I'm always heading to Kroger for supplies. It's a bit of a joke with the guys that work there now. And I'm notorious for forgetting things too and having to go back in multiple times ;)

  6. Wow, you have Cheese soup in America? I have never ever seen that here in Holland. Also, Cheddar is not all that easy to find too. Holland is a land of many Dutch cheeses, and French cheeses, and Italian or Swiss ones, but not real Cheddar.

    1. LOL yes we do! For this I used one by Campbell's Soup. It's a condensed soup for things like this I guess or that you add water to to get to actual soup consistency. Homemade Cheddar soup is really good too especially with broccoli in it :)

      Mmmm I love all cheeses but omg I would be lost without Cheddar (yellow or white variety). It's my favorite followed by Swiss :)
