Tasty Tuesday: Fried Yellow Squash Patties

Yum! A friend of mine posted this recipe to one of our groups and I just had to try it out. And OMG so good! Pretty easy too. Always a plus in my book. Thanks for the yummy summer treat Tonya!

Nice simple ingredients. 
And a great way to use up a bunch of yellow squash if your garden has gone squash crazy. 


First step is to grate the onions and squash. I used my cuisinart which worked nicely. No need to peel the squash. Just remove any damaged areas, cut off the ends of each squash and grate.  

Salt the grated veggies and place in colander to drain. It will get watery very quickly after the salt is added so make sure you get the colander in the sink or a mixing bowl quickly or you'll have a mess. 

Allow mix to drain until dry. If you're impatient like me let sit 15-30 minutes then press dry with paper towels. 

Next add in all of the remaining ingredients and combine. 
Using your hands will be easier than a spoon and ensure ingredients are well mixed.

Form into pattie shapes and fry in a bit of butter/veggie oil until nicely browned. 
Each set will take a few minutes. 
Make sure you shake the pan occasionally so they don't stick. 

Yum! You'll get 6-8 servings. 
Great with tomatoes, ketchup, sour cream or just plain. These are best hot and fresh!

This would also work well with Zucchini too.

FRIED YELLOW SQUASH PATTIES

Makes 6-8 servings

6-10 yellow squash, grated
1 med. onion, grated
1 1/2 Tablespoon salt
1 cup self-rising flour
1/2 cup cornmeal
Black pepper
1 egg
1 cup grated cheddar cheese
  • Place grated squash & onion in colander & sprinkle them with salt. Let sit over sink until well drained and dry
  • Add flour, cornmeal, black pepper, cheese and egg & mix together
  • Form into patties & fry. 
  • Serve with fresh tomatoes, sour cream, ketchup, etc

    1. They so were! Thanks for the recipe :) I made them a couple weeks ago and looking at it now I really want to run out and make them again!
