Tasty Delights--Tomato Soup w/ White Beans and Pasta

This was such an easy meal to make and turned out delicious. A handful of ingredients, hardly any dishes used and cleanup that was a snap. Was perfect for a winter afternoon!


I did add more pasta than called for. Instead of 1/2 a cup of pasta I added nearly a full cup. A 1/2 cup just didn't seem like enough pasta but that could be because I changed the type of pasta used as well. It calls for tubettini pasta which is pretty tiny and nothing fancy. I threw in campanelle pasta. It's so pretty with it's frilled edges.

Other than the fancy pasta everything else is a staple in my kitchen. Love being able to put something together quickly without having to run to the store for ingredients. Will definitely be making this one again in the future.

Tomato Soup w/ White Beans and Pasta (Click HERE for printable recipe)

Total time: 25 minutes, Servings: 4 large

2T olive oil
1/4t oregano
30oz diced tomatoes
15oz cannelleni beans, drianed
2T fresh parsley
2 cloves garlic, minced
28oz vegetable broth
1/2 cup tubettini or small pasta
salt & pepper to taste


  • Warm oil on med/high heat
  • Saute garlic 1 minute
  • Add oregano, stir
  • Add tomatoes, broth and bring to boil
  • Add pasta, stir. Cook until tender. Around 8 minutes
  • Stir in beans. Simmer 5 minutes
  • Season with salt, pepper, parsley
