Tasty Tuesday: Flourless Peanut Butter Chocolate Chip Cookies

I'm so far behind on my New Years Resolution to try 52 new recipes in 2012 so I'm trying something new... Tasty Tuesday. So at least I'll be sure I get one recipe a week tried and tasted. This week's Tasty Tuesday Recipe....

 Flourless Peanut Butter Chocolate Chip Cookies

Okay, yeah, I know those don't sound all that delicious but really they weren't half bad. 

My first choice was Snickerdoodles (YUM!) but I managed to have only self rising flour in the house and honestly I'm kinda scared of the stuff. If you've seen my cooking attempts you'd probably be scared of me getting anywhere near it too. Plus I was way too lazy to run to the store in the middle of the night just for flour. 




I love finding recipes for the everyday things you already have in your kitchen. Something quick and easy you can whip together when the mood strikes and you don't have to trudge to the store with a mile long list of ingredients. Only 6 ingredients are needed for these cookies!

Even simpler than the ingredients are the steps. 

Mix everything but the chocolate chips until well blended.

Then toss in those yummy chocolate chips and mix.

I was actually really surprised how well these held together. Without the flour they were a little...not greasy exactly...but kinda oily from the peanut butter at this stage. But they easily formed balls and didn't stick to my hands. Yay!

12 minutes in the oven and some pretty decent cookies came out. They're not really chewy but they weren't brittle or crumbly either. They actually have a nice texture and if I hadn't made them I don't think I would have noticed the lack of flour. 

If you're trying to cut back on flour but still craving a bit of baking these aren't bad at all. I'd make them again no problem.

Aaaannnd just an added little treat for yall since I'm reading a cowboy book and he's looking pretty tasty....




Flourless Peanut Butter Chocolate Chip Cookies

Ingredients
1 cup creamy peanut butter
3/4 cup sugar
1 large egg
1/2 tsp baking soda
1/4 tsp salt
1 cup semisweet chocolate chips

Parchment paper

Preheat oven to 350
  • Stir together first 5 ingredients until well blended (peanut butter, sugar, egg, baking soda and salt)
  • Stir in chocolate chips
  • Drop dough by rounded 2 Tablespoonfuls onto parchment lined baking sheets about 2 inches apart
  • Bake 12-14 minutes at 350 until puffed and lightly browned
  • Cool on baking sheets 5 minutes then transfer to a wire rack and let cool 15 minutes

  3. Definitely trying this one out. I love how easy it is AND I'm doing my best to cut back on flour. Ding, ding, ding...we have a winner!
