Tasty Delights-- Eggplant "Bacon"

Yeah. I'll admit it. This one is a little out there. But there was this Facebook video and I was all Oooo....maybe? lol


And so eggplant 'bacon' was had.

And it really wasn't that bad! I'll make it again. Noms!



There's not much to this one. Grab a nice eggplant and then some seasoning. Olive oil, soy sauce, paprika, maple syrup, a little salt and pepper.

It originally called for smoked paprika and liquid smoke but I don't care for a smoke flavor so I skipped those.



 

Slice up the eggplant in strips then brush each side with the sauce.


And bake at 300 for... a long ass time.


The recipe called for 45 minutes in the oven but I ended up just over an hour for mine.


Then plate and serve!



Yall. I liked it! It wasn't bacon but it was a pretty good substitute and a fun way to use up some eggplant. I'd totally do this for a picnic or summer outing. I might do the seasoning a little different next time--thinking brushing the eggplant mid-cook to increase the flavor or even letting the eggplant strips marinate for a bit first-- and cut the slices a bit thicker but other than that...it's a keeper!

Ingredients:
  • 1 eggplant
  • 2T extra virgin olive oil
  • 2T soy sauce
  • 1t maple syrup
  • 1/2t smoked paprika
  • 1/2t liquid smoke
  • pepper/salt
Directions:
  • Heat oven to 300
  • Cut eggplant into thin strips
  • Whisk together olive oil, soy sauce, maple syrup, paprika and liquid smoke
  • Brush each slice of eggplant and place on parchment lined baking sheet
  • Bake 45-50 minutes until beginning to crisp.
