Tasty Delights-- Cauli-Tots

Ahhhh Cauli-Tots! Yes! Tater-tots all cauliflowered instead. lol I love playing with veggies and doing them in different ways.

Cauliflower has been one I've used a lot this year. I'm kinda addicted to it. I saw this recipe over on Delish.com and was like...yep. We're trying this. And it was pretty good. I did two different versions. The original which was baked like they called for and then a fried version. I liked the fried cauli-tots better but obviously not quite as healthy.



I did a couple things different with my ingredients. I used regular bread crumbs instead of panko (I wasn't buying it just for 1/3 a cup) and added some onion. 

 

It's really easy. Cook up your cauliflower. I used the microwave. But whatever method steam it, puree it then squeeze out the extra liquid. 

Add all the other ingredients and mix...

 


Then form your tots! It sticks together pretty well.



I made hashbrowns and tots. It took a LOT longer to cook than they said. I ended up cooking mine for about 45 minutes. Original 20 then flipped and another 20.



And so ends Attempt #1 which was baking the tots.
Now, it really wasn't bad.
My only problem was they just didn't crisp up enough for me. They did brown but I like a crisper outer layer. So a second attempt.


One thing I changed on the 2nd Attempt was to press the cauliflower after it had been chopped. There was quite a bit of water even though I didn't use any while cooking the cauliflower.


Aaaaand frying. Make sure your oil is deep enough and hot enough before adding the tots. I ended up having to toss my first three. Erms!


Crispiness!!! YES!!!!! That's what I'm talkin' about!


Yup. This was working for me. Nicely crisped on the outside and yum on the inside. I much preferred the fried version vs the baked version.


So Cauli-Tots. I liked them. This really wouldn't replace tater-tots or hashbrowns for me but it was a nice little dish on it's own. You can taste the cauliflower and the texture is a bit different but it's still yummy. I'd do em again. *nods*
