Tasty Tuesday: Rolo Stuffed Peanut Butter Cookies!


Rolo Stuffed Peanut Butter Cookies!

So there's an abundance of candy this time of year and this chickie has been exhausted from the new job so I've been sneaking some not made from scratch goodies. 

And not feeling one bit guilty :) 
I'm also on a Rolo kick it seems.



 This one's very simple. Just need cookie dough and Rolos!


Unwrap Rolos and place one on each bit of cookie dough. 
Press Rolo into cookie dough about 1/2 way through (like bottom right cookie)

Wrap the cookie dough around the Rolo so it's completely covered.
Bake 13-17 minutes (mine took 16).

Allow cookies to cool on rack. 
If you try to move them right out of the oven they'll fall apart due to the melted chocolate/caramel center & OMG those centers are *really* flipping hot when they first come out!

These are really delicious and so simple. 
Took about 5 minutes prep work so perfect for the busy holiday season!

I liked them once they were slightly cool but the middles still completely gooey. 
The more they cool the more Rolo-ish the center (but still really blasted yummy!)

Rolo Stuffed Peanut Butter Cookie Recipe:
Peanut butter cookie dough (store bought or homemade)
Bag of Rolos
  • Preheat oven to 350 degrees
  • Place one Rolo in each cookie ball and make sure completely covered.
  • Space out 2 inches apart on parchment lined cookie sheet
  • Bake 13-17 minutes (or according to package) until cookies are baked
  • Allow to cool completely before removing from baking sheet

  1. I live alone, so I am all for the premade and precut cookie dough, I only bake one or two at a time in my toaster oven so that I don't over indulge, this season is not good for the goal of losing weight.

    Those look fantastic, I can't remember the last time I ate a rolo.

    1. Same here Alicia. Makes it awfully hard to bake sometimes. I started freezing my cookie dough this summer and it helped a good deal. I'd whip up a batch and ball them up then freeze. Then do like you and just make one or two at a time. This month I've been making full batches and donating them to our USO center here in town. Always nice to share homemade goodies around the holidays :)

      I don't think I'd had a Rolo in years until this last month. Now I want to put them in everything ;)

    But same with me, I can't cook a whole batch or I'll eat them all :/ I think I'll have to make an exception with these.

    1. They were so worth an exception Nae ;) That pack of cookies I bough only made 12 so not TOO bad :) LOL.
