This weeks Tasty Tuesday...
Simmered Red Beans & Rice
This was extremely easy to make and delicious. Perfect now that the weather's getting a little cooler!

Chop all of your fresh ingredients.
Toss everything but the rice into your favorite slow cooker and mix well.
[I'm a big old baby and left the hot sauce out. It's pretty good without but if you like heat toss that in too!]
Cook on LOW for 4-6 hours OR on HIGH for 2-3 hours.
Mash slightly with a potato masher then cook on LOW another 30minutes to 1 hour.
Serve over rice. Garnish with green onions, cheese, etc.
I'll definitely be making this one again. It smells heavenly and took less than 20 minutes hands on time.

Makes 6 servings, Total prep time: 15 minutes, Total cook time: 2-6 hrs
2 cans (15oz each) read beans, rinsed and drained
1 can (14oz) diced tomatoes, undrained
1/2 cup celery
1/2 cup green bell papper
1/2 cup green onions with tops
1/2 small yellow onion
1-2 teaspoons hot pepper sauce
1 teaspoon Worcestershire sauce
1 bay leaf
Hot cooked rice
- Chop celery, green bell pepper, green onions and yellow onion.
- Combine all ingredients (EXCEPT rice) in 4 1/2 quart crock pot, mix well
- Cover and cook on LOW 4-6 hours or on HIGH 2-3 hours
- Slightly mash mixture with potato masher to thicken. Cook on LOVE 30-60 miniutes
- Prepare rice as directed on package
- Serve beans over rice.
