Simmered Red Beans & Rice...perfect for a cold fall night!


This weeks Tasty Tuesday...
Simmered Red Beans & Rice
This was extremely easy to make and delicious. Perfect now that the weather's getting a little cooler!

Check out the recipe after the jump!


Chop all of your fresh ingredients.

Toss everything but the rice into your favorite slow cooker and mix well.
[I'm a big old baby and left the hot sauce out. It's pretty good without but if you like heat toss that in too!]

Cook on LOW for 4-6 hours OR on HIGH for 2-3 hours.
Mash slightly with a potato masher then cook on LOW another 30minutes to 1 hour.

Serve over rice. Garnish with green onions, cheese, etc.

I'll definitely be making this one again. It smells heavenly and took less than 20 minutes hands on time.

Simmered Red Beans & Rice Recipe
Makes 6 servings, Total prep time: 15 minutes, Total cook time: 2-6 hrs


2 cans (15oz each) read beans, rinsed and drained
1 can (14oz) diced tomatoes, undrained
1/2 cup celery
1/2 cup green bell papper
1/2 cup green onions with tops
1/2 small yellow onion
1-2 teaspoons hot pepper sauce
1 teaspoon Worcestershire sauce
1 bay leaf
Hot cooked rice
  • Chop celery, green bell pepper, green onions and yellow onion.
  • Combine all ingredients (EXCEPT rice) in 4 1/2 quart crock pot, mix well
  • Cover and cook on LOW 4-6 hours or on HIGH 2-3 hours
  • Slightly mash mixture with potato masher to thicken. Cook on LOVE 30-60 miniutes
  • Prepare rice as directed on package
  • Serve beans over rice.

  1. It sounds good, but that is an awful lot of cook time. But on the bright side it does sound like something that would freeze well. Maybe I can cook on the weekend and then have something for lunch the next week.

    It is getting cold! I never check the weather before I leave (I need to get back into the habit) and when I left this morning in a cute dress I open the garage to find that it is 60 degrees - that is just unacceptable! Especially when it goes up into the mid/high eighties by afternoon time.

    1. Oh goodness yeah it was a long time cooking if you're home and ready to eat. But perfect if you want to set it up and then run out for errands. Love those slow cookers :)

      I'm out of habit with it too Alicia! This past week got me really good. All the sudden we were hitting the 40s at night! That's a real surprise when you head out first thing in the morning.
