Tasty Delights-- Texas Caviar

One of my 2017 goals was to try 52 new recipes. And this is the first one. Of course, yall are reading this in, like, June, and I made it in January but still! lol Texas Caviar. I don't know how I stumbled on this one but it was pretty and rather healthy and I was in.

It was yummy, too!


So I changed my ingredients a little. In the original it included jalapeno and canned corn. Plus Italian dressing instead of oil and lime juice. But I'm not a fan of jalapeno and I only had frozen corn and lime sounded better.
So there ya have it. lol


I also cooked my corn and beans a little.
Now, I know you can technically eat them right from the can/bag without cooking but I just... nope!
I needed to heat them a little first. 


Dice all the things.


And combine. Isn't the coloring pretty?! I loved it in the midst of winter when everything outside is so stark. It was nice to bring some bright color into things.


Add some tortilla chips and done! Mine was pretty mild since I left out the jalepeno and went light on some of the seasonings so it was perfect for me. I love dips like this since you can customize them so easily to your personal preference. Like a bit more tomato? Add it in. Like heat? Or milder? Just adjust to suit.
