Tasty Delights-- Spaghetti Squash "Pasta"

I'm trying to be "healthier" and decided to give spaghetti squash a go and use it instead of actual pasta.
Different. But not bad. 


There's a good bit of flexibility with this one. 
Grab the extra veggies and such you like and go!

First step is to cook that spaghetti squash.
I used the microwave which took about 10 minutes. 
Slice squash in half and scrape out the seeds. 
Then place cut side down in a microwave safe dish and add water to the dish.
Microwave 10 minutes then fork out the squash strands into a separate dish.

While the squash is cooking start working on your sauce.
Saute the onion, add in the tomatoes, herbs and simmer.

I went with carrots and spinach for my veggies.

Let simmer until veggies are softening.

And plate up! The squash is a little crunchier than regular pasta but actually pretty good.
I might skip the carrots next time. Or just cook them a little bit longer. 
They were a little too firm as they were.

Overall a healthy alternative to the typical spaghetti dish and pretty tasty. 
It could also be varied each time depending on what veggies are seasonal which I like :)

Spaghetti Squash "Pasta"

1 spaghetti squash
1 T olive oil
1 yellow onion, chopped
1/3 cup white dry wine
16 oz tomato sauce
1/4 cup parmesan cheese
1 can (1lb) tomatoes pureed--I just used 16 oz petite diced tomatoes
2 garlic cloves
1 T basil, rosemary, thyme
1/4t black pepper
3 medium sliced carrots
2 T parsley
1 small zucchini, sliced
1 cup broccoli, chopped
(I skipped the zucchini and broccoli this time and added spinach)
  • Microwave or bake spaghetti squash then set aside
  • Heat olive oil on medium heat then saute onions uncovered 5 minutes
  • Add wine and cook covered 3 minutes
  • Mix in tomato sauce, tomato puree, garlic, herbs (except parsley) and simmer covered 3 minutes
  • Add carrots, simmer 3 minutes
  • Add broccoli and zucchini, simmer 3 minutes
  • Garnish with parmesan cheese and parsley
