Tasty Delights-- Mac & Cheese w/ Fried Avocado

Noms! A couple years back at Christmas when my mom was visiting we went out and one of the dishes served was Mac & Cheese with Fried Avocado. It was so dang good! So I decided one day when I had a craving to try and make it on my own. Definitely worth a little bit of effort and one I'll do again one day...

I made my favorite mac & cheese which has peas in it but really you can do any mac and cheese with this. 

Make up your cheese sauce.

Add in peas and pasta (and maybe a little more cheese)

Then bake! It's one I make on it's own but this time fancying it up with the fried avocado too!

Okay so fried avocado was totally intimidating to me but turned out to be REALLY easy.

I would suggest adding salt, pepper and whatever other seasonings you'd like to this directly onto the avocado then do your crumbs and other things.

I used plain bread crumbs for mine and while I liked it it definitely needed a bit more flavor on it's own.

You want a ripe but firm avocado.

Slice avocado into medium sized wedges then coat in flour, egg and bread crumbs.

Then...fry the suckers. I did a couple slices at a time. It took just a couple minutes.

You want them a nice browned color. Keep an eye on them because they can easily burn.

Place them on paper towels to drain.

Plate up and serve!

I really liked this. It was a different twist on traditional mac & cheese and I like a change now and again. I would add more seasonings next time to the actual avocado slices but it wasn't bad. It's an interesting combo of textures between the crisp coating and the creamy insides.

Add a little ketchup (because mac & cheese MUST have ketchup in our household) and I was good to go.

I had it for a meal but it could be a side dish as well.
