Yall! How pretty is this dish? I'm new to cooking with sun-dried tomatoes and have found I like them quite a bit. This one was good overall but I'll definitely make some changes and...try not to make such a blunder.
Just a few ingredients.
So. Yeah. Don't do this. Don't do it at all. lol
I was toasting up my gnocchi and was all let me add some seasoning!
Aaaaaaaand opened the wrong side of the pepper.
Oops!
After shaking off the gnocchi and making myself sneeze near to death I started browning up those gnocchi and giving them some color.
Once they cooked up a bit add in the sun-dried tomato slices and beans.
And then a big bunch of spinach after things have warmed through.
Cook until tender and serve!
I love the color in this dish. So festive and perfect for the holiday season if you have a vegetarian coming over.
It was good, too!
The only thing I'd really change is maybe adding a sauce of some type. It was just a spot dry to me. It tasted fine but felt like it needed a little lemony kick of some sort. Maybe an Italian dressing.
Ingredients:
- 1 package packaged gnocchi
- 1-2 tablespoons olive oil
- 1/3 cup sundried tomatoes, diced
- 4 cups loosely packed spinach
- 1 can white beans, drained and rinsed
- salt and pepper
Directions:
- Heat oil to medium then add gnocchi, salt, pepper and cook 8-10 minutes until golden and crispy.
- Add the gnocchi and separate them. Sprinkle with salt and pepper and red pepper flakes, and cook, stirring occasionally for 8-10 minutes, or until golden and slightly crispy.
- Add the sundried tomatoes and white beans.
- Add spinach. Stir until wilted and everything is heated through.
- Add additional salt, pepper and red pepper flakes to taste.
- Serve with freshly grated Parmesan cheese.
