Tasty Delights-- Mini Pumpkin Cakes

Ahhhhh Halloween! It needs cuteness. And cake! I made one of these years ago when I was down in Florida and being our "social director" aka making EVERYONE CELEBRATE EVERYTHING. lol

I thought they were so cute and I was wanting cake and it's fall and I figured I'd make them again. They're easy and tasty and just cute.



First up! Make your bundt cakes.
I opted for mini ones this time. Last time I made a big one.


So damn cute!
Be sure to spray your pan well with cooking spray so they don't stick. Two of mine stuck just a little because of that middle rod. A couple little taps and they came out.



They do get a little puffy so trim the bottoms off each bundt half.


Spread with...something. I was lazy and since making only three decided not to make frosting. I love hazelnut spread so figured...why not.

Next up is making the glaze!

No. Can anyone see the problem right here?


Yeah. Apparently when I capped the food coloring last time I used it I switched the caps on the red and blue. *hangs head*

And so a second batch of glaze was made. 

The glaze is one cup of powdered sugar and 2T of lemon juice (or lime or just milk). I'd actually probably go for milk next time to make it since I used a chocolate hazelnut filling. I didn't totally love that citrus flavor with the hazelnut.


First you can tell the difference in the three pumpkins and their glaze. The one in the back was the first I did. It was just a bit too thin. So I added another 1/4th cup of powdered sugar to the mix and it was perfect. This is one you'll just have to fiddle with until it's the right consistency.

Anyways. The stems! I used marzipan and some green food coloring.
Shape into stems and top your pumpkins.

I thought about using chocolate frosting or using mini cookies stacked and then shaved. This seemed the quickest way. It just took 30ish seconds per stem.


Aaaaaand cuteness! I love these mini ones. It would be cute for a holiday get together where you could make one for each guest for dessert.

No recipe on this one. Really it's whatever cake batter you want to use. Homemade or box and made to their directions. Frosting to patch them together. Then the glaze that starts with 1 c powdered sugar, 2T juice/milk and food coloring.
