Tasty Delights-- Crispy Sunchoke and Quinoa Salad

So this one was chock full of things I've never tried! Woo! A couple weeks ago I mentioned trying the HelloFresh subscription and this was one of the recipes in my first box.

It was super easy to make and really fun.

Plus trying new things! I'd never even heard of sunchokes which are a tuber and type of sunflower. Who the heck knew that?! It reminded me of ginger looking at the outside but inside was more like water chestnut. Kinda crunchy until roasted. Kale was a new one for me as well. And I'd never made Quinoa on my own. It always intimidated me but again...super easy! Yay!



As part of the HelloFresh set up they send you exactly what you need for the recipe. So handy! 


So these are sunchokes. I have no idea if I can actually buy them locally. Honestly if I'd seen them at the grocery store I would have looked right past them. Cooking-wise you don't peel them. Just wash with a bristle brush then slice.



Saute up the kale. Another I'd never had before this recipe. It wasn't bad. I prefer spinach and think if I make this again I'll do that. But it wasn't bad. 


While the quinoa cooks (just like making rice) chop up all the other bits.


And combine with the quinoa once it's finished.



Sprinkle on the feta cheese (another new to me) and cranberries.


 This was so simple, yall. I really enjoyed it, too. The sunchokes took a little getting used to flavor wise but I didn't hate em. I never would have thought of this combo of ingredients but I liked them together. The cranberries added a nice hint of sweetness. I'll so make this again. Especially the quinoa. No longer intimidated. Woo!
