Tasty Delights-- Pasta w/ Pesto Cream Sauce

I've become... a pesto junkie. Yall. It's my crack. I seriously regret the fit I threw back in 4th grade when we went to a dinner party and that's all there was. Damn young me! What was I thinking? All those years missing such a yummy dish! lol

Anywho. Pesto Cream Sauce. It's super easy. The whole dish is. And it works on pretty much any pasta. I usually make it with tortelloni but this go round did a linguine.



I do cheat and use store bought pesto. I'm thinking next summer I'll try to make my own with the basil I grow. How yummy would that be?

All in all-- 5 ingredients. Pasta, pesto, milk, a splash of olive oil (if you like) and veggies. I like to do asparagus.


While your pasta (with a splash of olive oil) is boiling start your sauce.
About a cup of milk and pesto. Let it simmer.


Then add your veggies and let them cook until tender but crisp.


Not the prettiest at this step but it smells amazing! And starts to thicken up fairly quickly.


Once the asparagus is tender add in your pasta and give it a good stir.



Honestly it's so delicious it's ridiculous. I do like to add a little tomato for a color burst. It gives it a little pop of freshness, too.

I love this dish when it's just a little cold and I need a warm me up. It's easy and delicious and only takes about 15 minutes start to finish.



Ingredients
  • Pasta of choice
  • Asparagus
  • Pesto
  • Olive Oil (optional)
  • 1-1.5 cups milk
Directions
  • Boil pasta with a small splash of olive oil then set aside while the cream sauce finishes. 
  • Mix milk and pesto on medium heat and simmer for a couple minutes.
  • Add asparagus and cook until tender and sauce has thickened
  • Add pasta and stir.
