Tasty Delights-- Asparagus & Tomato "Carbonara"

So I was scrolling through Pinterest and saw a recipe for a vegetarian carbonara that looked...amazing. And I decided to give it a try. Thing is...the egg bit of the recipe totally creeps me out (it's cooked just by way of the hot noodles) and I just...couldn't. I know. I know it cooks. But in my head...nope. So I altered and used some butter and almond milk to help make the sauce. So not really a carbonara but it's going to be my version of it.

And it was delicious! Not to mention super easy.




So there aren't too many ingredients in this one. Obviously it's not the traditional carbonara but it's a fun alternative for those who are vegetarians or that just like to play around with other options.


I love asparagus so I was pretty excited to have a new way to use it. Cut it on the diagonal and then saute. Add in your garlic and saute a little more.


Add your tomato and....saute a little more. lol

This is also a good time to add your pasta to the water.


The tomatoes cook down and you want them just to the point of tender.
I love the color contrast!

Next up is making the cheese mix. Typically you'd use an egg and the cheese.
I didn't want the egg, like I mentioned, so I put in a tab of butter and a splash or two of the milk until it was kind of creamy.


My next step is a little out of order since I didn't use egg in my cheese mix.

If you use egg you need to immediately toss your pasta right out of the boiling water with the cheese/egg mix so that the heat from the pasta will cook the egg enough. Then add your veggies.

If you do like I did you can just add your pasta to the veggies.


And toss it all about.




Garnish with a little basil and extra cheese & Serve!


Seriously. Dig in. This is delicious!

I had to stop myself from eating all of this in one sitting. It was so freaking good!
I always struggle with using asparagus in dishes for some reason but this was a fantastic use of them.


All in all. Two thumbs up. I can see this becoming a regular dish at the house.
