Once again a Tasty Delight started with seeing something on Facebook. lol I'm a sucker for those videos.
This one is SUPER easy. You basically just dump all ingredients in the pot and let it cook for 20 or so minutes and voila!
The original recipe is actually for more of a pasta bake consistency. I ended up doing mine more of a soup version. Both work fine!
It turned out pretty tasty too. It actually reminded me of hamburger helper. Ha! It's been ages since I had one of those but this was like a homemade version of it.

Okay so I've done this two ways. The original recipe called for a can of diced tomatoes and a can of tomato sauce. Apparently I am anti-tomato sauce and just can't remember to buy it.
The second time I also added a can of kidney beans and really liked that.
Dump everything in the pot.
If you're a meat eater cook up your meat first.
If you're a vegetarian and adding fake meat hold off on that until later.
Add water to the pot. I did 3-4 cans (I used the empty diced tomatoes can) until the dried pasta was covered and things were soupy.
Cook until pasta is tender then top with cheese and sour cream.
Mine took around 20 minutes. I simmered then brought it up to a boil.
You can just boil it out right and cook for less time as well.
End result...not bad for a quick and easy meal. I love that you could just dump everything in and leave it be then serve. It's also pretty customizable. Next time I'll probably use homemade seasoning instead of the taco seasoning packet but I had one on hand and figured why not.
For those who don't do well with heat. This was very mild since I used "mild" taco seasoning. Flavorful but not one to set your mouth on fire (unless you want it to and add it on purpose)
