Tasty Delights-- *Unstuffed* Green Peppers!

Heh. Thought I'd try something a little different this week and made *unstuffed* green peppers. 
And damn. It was pretty good!


My ingredients are a little different since I'm a veggie but you can do this with regular ground beef/turkey. 


Saute up your onion, peppers and garlic!

Then add in your cooked meat/veggie substitute and tomatoes.

Next add in rice and a little cheese and mix!


Pour into a casserole dish and sprinkle with mozzarella or cheddar or whatever cheese you prefer.
Then...bake.


* I might have gone just a little cheese crazy lol


I've never actually made real stuffed bell peppers and can't seem to get myself to eat them either b/c of the whole pepper. For some reason that just doesn't work for me. But! This totally did. It was so easy to make, smelled great and was pretty tasty. 

The recipe is kind of made up. I couldn't find a recipe I really 100% liked so I kind of picked and choose the parts I liked and went with it.

Unstuffed Green Pepper Casserole (Click HERE for printable recipe)

1 pound ground meat or veggie substitute
1 1/2- 2 green peppers, diced
1 small onion, diced
14 oz can diced tomatoes w/ juice
2 cups cooked rice--white or brown (I used brown)
salt, pepper to taste
1 tablespoon seasoning--I used an Italian seasoning mix
2 cups shredded mozzarella cheese
1 teaspoon garlic
  • Preheat oven to 350 degrees
  • If using real meat brown it then set aside saving grease for sauteing 
  • Saute onions, green pepper and garlic in grease from meat (or in 1 T butter if using veggie meat) until slightly softened
  • Add tomatoes and seasonings then simmer for a few minutes
  • Add browned meat or veggie meat
  • Add rice and 1/2 cup cheese. Mix well then turn into casserole dish
  • Top with remaining mozzarella then bake at 350 for 20-30 minutes until bubbling
