Okay so I know this Tasty Delight isn't all that Whoa! but I figured I'd still do it.
One thing I've been trying to do this year is cook ahead and freeze meals so when things are crazy insane here I can still have yummy food and not have to really think about it.
In my little cooking binge I decided to try homemade frozen burritos after seeing them I think maybe on Pinterest (imagine that!) lol Since I'm a veggie I wanted to be able to have some nice bean burritos that were actually vegetarian friendly ready to go instead of picking through options at the grocery store.
So. These are pretty basic but I liked that and that I could customize it to make sure the cheese was vegetarian safe and didn't have animal rennet which is something I try for if possible.
I'm imagining you could do meat in there as well if you wanted.
Just mix 1 can refried beans with a jar of salsa and heat until well combined.
Could this BE any simpler?
And the super easy continues.
Spoon on a portion of the salsa/bean mixture
Add on some shredded cheese.
Then roll the burritos.
Now for the freezing.
Once they've cooled a bit wrap each individual burrito in aluminum foil.
Then add all wrapped burritos to a freezer gallon ziplock.
Roll out any extra air and seal.
Sooo. Not an earth shattering one but pretty handy!
It was nice to have something other than pastas and soups frozen and ready to nom.
I've had them up to I guess 2 weeks out and they were tasty. I'm sure they're good past that but I usually run out of them and have to make a new batch before that happens. lol
Oh and there's really no "recipe" for this.
I do one can of beans with one jar of salsa but you can do the ratio to whatever your preference.
Same with the cheese. However much or little you like.
It makes 6-8 burritos depending.
