I'm always looking to try new things. Jackfruit is one of my new-ish items. It's an interesting fruit. Can be savory and have the texture of pork when unripe and then when ripe it's sweet and apparently peach-ish in texture.
I've only had green jackfruit so far. I decided to make a pulled pork sandwich for my V post. And, yall, it was pretty dang good! Even with one little blip recipe-wise.
Pretty simple ingredient-wise. I didn't have ginger so skipped that. Next time, though, I'll add it. Salt wasn't necessary either since the seasoning mix had salt as well.
It shreds very easily. I just used my hands and smooshed it. It really has a pork similarity at this point I think.
So here was also my blip with the bbq seasoning. I had a hamburger seasoning that was new to me and had similar elements so went with that. But it was very very salty. It called for 2-3 tablespoons. I could have gotten by with 1-2 teaspoons I think.
Mix everything then spread on a parchment lined sheet pan and bake.
Seriously. Look at that bbq sandwich!
Yeah. This was good. A bit too salty but really this was the first time I was making this recipe so I don't expect perfection right off the bat and I didn't use quite enough jackfruit for the recipe. I will make it again for sure, though.
This would be an awesome thing to make for vegetarian/vegan friends if you're doing summer get togethers. It's very easy and tasty.

Vegan Pulled Jackfruit Sandwiches Recipe
Ingredients
- 2 20 oz cans young green jackfruit (2 cans)
- 1/2 medium red onion thinly sliced
- 1 tsp minced garlic
- 1 tsp minced ginger
- 2 to 3 tbsp bbq seasoning , add 1 tablespoon sugar if the seasoning is just spices. Use 3 tablespoons if the seasoning already contains sugar.
- 3/4 cup bbq sauce
Directions
- Drain the jackfruit. Make sure it's well rinsed and squeezed as much as possible.
- Shred the jackfruit using your fingers or a knife and removing any seeds
- Combine jackfruit, onion, garlic and ginger. Sprinkle with the bbq seasoning and mix well.
- Add 2/3 cup bbq sauce and mix.
- Spread on parchment lined sheet pan
- Bake at 400 for 30 minutes, stir and bake another 20 minutes
- Mix in a little bbq sauce and serve
