Oh my heavenly food. I NEVER would have thought to make chickpea tacos. Chickpeas pretty much only exist for hummus to me. So this was a delicious surprise and I will SO make them again.
A fresh, light twist on tacos. Loved. It. And look at all those lovely colors together.

Onion, chickpeas, red pepper. Noms!
Alright s my issue with chickpeas is the skin. I think it's so icky. You don't HAVE to but I spend a little extra time and pop them out of their skins before cooking.
Season and roast!
*you roast the red pepper and onion as well, starting them about 7 minutes after the chickpeas go in, but I, erm, might have gotten ahead of myself and forgot the photo. lol
While the chickpeas are roasting make the crema. It's just sour cream, lime juice, a little salt and lime zest. It was very tasty.
And whip up some quick guacamole! This one had avocado, diced onion, lime juice, salt and pepper.
Warm the tortillas and then start layering on the deliciousness.
I will make this one over and over again. I wouldn't change a thing, either.
It was pretty dang perfect.
