Today's recipe was part of my HelloFresh box. Yall. It was freaking delicious! I wasn't sure about this one since I'd never even heard of one of the ingredients and I don't typically like fruit in my savory dishes but damn! DAMN! I'll make this one again.
Okay so I waited a little too long to make my HelloFresh box (that's on me not them) and my pre-diced butternut squash had spoiled but thankfully I had a full one on hand. Yay!
I'd tried all of the ingredients but Freekeh. I've never even heard of this and I'm like oh gosh what the hell do I do with this?! But it wasn't bad. This is a grain and kind of woody/smoky flavored. It's cooked up just like rice bringing it to a boil then simmering it while covered then you rinse it off real quick once it's finished.
Half the brussels sprouts and butternut squash diced and salt/peppered and ready to be roasted. Noms!
While everything is baking and boiling make up the dressing. They called this a citronella. It's shallots, lemon zest, salt/pepper and lemon juice.
And the other half of the brussels sprouts are shredded and sauted.
Once the shredded brussels sprouts are done they're combined with the citronella dressing, parmesan, and a diced up apple. Here's where I got nervous. lol
Then combine it all!
The freekeh and the citrus dressing are combined then topped with the roasted brussels sprouts and butternut squash. Noms!
This was one of the yummier things I've made lately. It had nice layering and flavors. Interesting combination of textures and was just delicious.
I don't think I'd change anything about this one and I'll definitely make it again in the near future once I can hunt down the freekeh though I'm sure a different grain would work nicely with it as well.
