Woohoo! Trying new things! This recipe was part of the HelloFresh box I received back in October. It was also my favorite meal of the box which was a huge surprise because I typically am not a fan of Indian food. But...rice, potatoes, cauliflower? Gah, I'm in! It took a little bit of time but was pretty dang easy to make.
I think all of the ingredients are pretty easy to find at most grocery stores.
I ended up leaving out the cilantro (because OMG food from the devil) and coconut (because again...gag) but other than that I stuck to the list. lol
Saute onion, ginger, peppers and spices in a generous dab or two of butter.
Yum!
Then add in the potatoes and cauliflower and a cup of water and cook, covered, until tender.
I ended up switching dishes mid-recipe because this one didn't have a lid. lol But look at all that yum pre-pot change. The turmeric turned it yellow which I knew it did but was still a bit of a surprise. lol
And plate it up on a bed of rice. Drizzle with greek yogurt or sour cream and squeeze a bit of lemon juice on top.
Goodness. It was really yummy. I think the perfect dish for the winter, too, with all those warm comfort based ingredients. It's a fairly simple dish but was really quite good. I'm kinda happy to have an Indian dish I enjoy. Yay for trying new things!
