Tasty Delights--Vegetarian French Onion Soup

A bit back I had a craving for French Onion Soup or some reason. Just could not get it out of my mind. So...I had to make some since I'm a vegetarian and in restaurants they aren't veggie friendly.
And...yum! But omg...huge fucking pain in the ass to make. Holy!


 LOTS of onions. Lots and lots of onions.
And then sauteing those onions on low until they caramelize a bit.

So. This is an UGLY recipe to make. It's just not pretty. But hold out with it.
This recipe called for red wine.
Purple onions...kinda funky lookin.

 Now. Tyler (who the recipe came from over on the Food Network) was all the wine will cook out in just a few minutes. 

Bullshit, Tyler. Bullshit.
That wine took a freaking LONG time to cook out.
Like 2 hours long.

But it finally did cook out then broth was added. You could do beef or veggie broth.

 Next is the cheese.
And I gotta tell yall. This cheese--Gruyere-- smelled like stanky cat butt.
How do people eat cheese like this?!!
I broiled some on the bread and on the soup regardless since that's what people said.

Next time I'm so going with regular cheese.
::shudder:: It may have tasted fine but Good Lord the smell.

Annnd soup! This was a lot of effort but ended up pretty good.
I froze half of it for later and may make it again some day though I'll use that different cheese for sure and I want to try a recipe that has sherry instead of red wine. I'm thinking THIS one from Rachel Ray. Looks like it cooks a lot faster than this one.
