Heh. So, I'm trying to be healthier. That...doesn't always go well since I lurve my food and playing in the kitchen. But I'm trying and one of the things I love is Mac & Cheese. But omg the calories! Then I saw a post about a veggie "Mac"&Cheese using Cauliflower that was 'just as good!'. I love cauliflower too so figured...sure.
Well. This is NOT a substitute for Mac&Cheese. It's yummy. But, yeah, it totally does NOT quench that Mac&Cheese craving. *flails so hard*
It's not really much different than regular Mac&Cheese. I did change a couple things since I'm not into coconut flour or milk--I used regular flour and almond milk.
Saute up some onions, garlic and butter.
Then a little sauce making...
Then baked for about 30 minutes.
I liked it. It's a nice side dish and was easy to make. Nothing knock my socks off amazing and definitely no substitute for real Mac&Cheese but I liked it. I'll make it again I'm sure. Cauliflower is one of my new favorites so having another way to whip it up is always good in my book.
