Tasty Delights w/ Mary Behre-- Mandelbrot!


Hey guys! One of my favorite ladies-- Mary Behre--is joining us today with a Tasty Delight. Her series is romantic suspense with a bit of woo-woo added in. It's so fun! The heroines have 'crifts' aka cursed gifts where they can see ghosts or talk with animals or get visions from objects--that's her current heroine from Energized. It's verra verra good. Anywho. Hi Anna! Thanks for letting me do this Tasty Treat! Since today I’m celebrating the release of my latest Tidewater novel, Energized, and gluten free food plays a role in the story, I’m going to do a yummy gluten-free cookie recipe.

This is recipe is for Mandelbrot. This German-Jewish delicacy is similar in style to Italian biscotti but since we’re doing it gluten-free, we’ve made a few modifications. . It takes some time to make but is totally worth every second. Here we go!
Ingredients
  • 1 ¼ C sugar
  • ½ tsp ground cinnamon
  • 2 C garbanzo bean flour
  • ½ C all-purpose gluten-free flour
  • 2 tsp baking powder
  • 2 tsp xanthan gum
  • ½ tsp salt
  • 5 large eggs
  • ½ C melted unsalted butter
  • 1 ¼ tsp pure vanilla extract
  • 1 ¼ C coarsely chopped almonds or walnuts (optional)
  • 1 C semi-sweet chocolate chips

Preheat oven to 350 degrees Fahrenheit. Line cookie sheet with parchment paper. Coarsely chop walnuts and set aside. In a small bowl, combine cinnamon and ¼ cup of sugar. Mix until well blended then set aside.

In medium bowl, combine flour, remaining sugar, xanthan gum, baking powder, and salt.  Set aside. (I know it’s a ton of dishes but there’ll be plenty of time for clean up.)
In a large mixing bowl whisk together 4 eggs, melted butter, and vanilla extract until smooth. Add flour mixture until well blended. Fold in walnuts or almonds and chocolate chips.

Lightly flour a work surface. Divide the dough in half. Shape the two parts into logs that are two inches wide by twelve inches long. Place logs on the parchment lined cookie sheet.

Beat remaining egg and brush egg over the logs until well coated. Sprinkle the cinnamon sugar mixture across the top of the logs. Place logs into oven and bake for  25-30 minutes or until  golden brown. Once baked, remove from oven and allow logs to completely cool on the cookie sheet.

Transfer logs to cutting board and cut into ½ inch thick slices. Places slices back onto parchment lined cookie sheets. Sprinkle with another cinnamon sugar mixture. Bake cookies an additional 15 minutes or until desired crispiness then transfer them to wire racks. Mandelbrot will keep at room temperature for four days in an airtight container. 

*NOTE: True Mandelbrot calls for almonds and no chocolate but we prefer it with walnuts and always chocolate.
